Long story short.
A critter chewed through my pigtail connector, after the ambient air temp sensor harness. I found the part number (AC Delco PT2629) through this website.
Sourced and spliced the new part today. After inspecting that the sensor and first harness section was intact, re-installed the passenger front wheel house and I drove the car for 10-15 minutes above 40mph, hoping the system would reset.
Where the outside temp should be on the radio display (under the time), nothing shows. I was wondering if any one knew if there was a hard reset procedure or if I should pull the neg battery terminal or even the hvac fuse?
Any ideas?
*Update 1
After dinner I checked any all fuses that associated with the HVAC system, in the Engine Compartment and Instrument Panel boxes, per the owner's manual. All looked intact
I'll drive it to work over the next few days and report back. Worst case, I'll pull the negative battery terminal.
Check engine has not turned on since the vermin incident as well.
Update 2
Pulled the negative terminal and waited 60 mins. I reconnected but it only reset the time and date on the infotainment display. All radio presets and trip distance were found as they were prior.
I have an oil change this Friday, I'll bring up my situation before the appointment and ask if they have any advice or any time to locate the issue.
If the dealer doesn't have time, my next move is to remove the bumper entirely, check for voltage/continuity, and replace the sensor (part number ACDelco 25775833) all together.
While I'm at it I'll probably paint the headlight rings too. ¯\_(ツ)_/¯
By the way, when I use the remote start on cold days (usually below freezing), the rear defogger is turned on automatically. So the system must know the ambient temp somehow, even though the cable was broken all this time. Mild mornings, above freezing like today, the rear defogger isn't/wasn't on. I'm stumped, but I will report my findings or solutions with you-all.

The shop replaced the ambient temp sensor and performed a system update. Although I could have replaced the sensor myself, I'm ok with paying because I couldn't have performed the second part myself.
