My new toy is Smoking!

I broke in my new toy yesterday with some corn and pork back ribs! I used apply wood for the smoke, and they came out delicious but not fall off the bone. I need to learn some new skills to master this thing.

If anyone else smokes, please post some tips or recipes! I'm completely new at this so any pointers will be appreciated.

The ribs were great, just wish they fell off the bones. I made 2 full racks, but since my wife grosses out eating ribs I have 1 1/2 racks left over for myself. Should last a few days if you want some 007! You should be able to make it here by Tuesday.

We must have some experience smokers in the family. You can share your secrets, I promise to keep it in the family.

We use a wood pellet smoker, time and temperature are the key to getting it fall-off-the-bone. I wish I was good at it, but hubby does all the smoking. The last time I tried, I set the damn thing on fire! I don't know what settings you have, but we have high, medium and all out smoke. He starts it out on medium to get things to temp, then smokes it for hours. My favorite thing to smoke is fresh pineapple, it comes out like candy!
