...and what is wrong with that?
In all seriousness, my car is lowered almost
3" and I got around last winter great on a set of Conti DWS tires. The car being 0.65" lower due to the smaller tires is not going to be an issue, IMO.

I guess you guys much be much better driver's than I am...
I drive over a thousand miles a week, every week, year round - regardless of the weather. Yes, I've plowed snow with the front end of my Impala during snow storms here, but the car is not lowered.
Personally, I would think that I would have had much greater difficulty driving with reduced ground clearance. When you travel in your job as much as I do - you don't want to make your life more difficult.
Last year I had the unique experience of having had my colonoscopy scheduled for the morning after a blizzard started the previous afternoon. If you've ever had a colonoscopy, you know that once you've done your prep, you want to make your appointment (don't want to go through the prep a second time).
I awoke to 42" drifts of snow in part of my driveway. Blew out the snow so that I could make it out to the county road near my home. Winds were up to 60 MPH.
Without going through all the details - I made my appointment. But a normal 25 minute drive took an hour and 10 minutes. At times the snow drifts in the unplowed lane (two lane country roads) were taller than my vehicle. Even with being plowed - at times I was busting through drifts that were bumper height.
When I got home from my colonoscopy late that afternoon - there were still sections of my drive home that were only 1 lane wide with snow drifts up to 8' tall on either side of that 1 lane.
Bottom line, tires in excess of 1" shorter than the OEM put on is not a good idea. The load rating of the tire is wrong, the shorter tire will have an adverse effect on fuel mileage and the reduced ground clearance will make driving in snow more difficult (not impossible - but more difficult).
I don't think that's a smart plan just to try and save some money on three used winter tires.
FWIW Scot - if your car is lowered 3" - you have reduced your ground clearance from the stock (for 2014 anyway) 4.9" to about 2". That wouldn't work for me driving in my area.
Your results may vary.
