Forgive my ignorance but what aspects do most of these aftermarket pedals change? I saw one pedal kit moved the throttle closer to the brake pedal, do they also move the throttle out/closer to the seat?

They don't move the throttle out closer to the driver, they do get it closer to the brake, and all the pedals are wider and larger in general.
I don't race this car at all and I really don't "need" these, I just like Sparco stuff and I thought the stock rubber coverings on the brake and clutch were terrible and did not provide much grip especially when cold. If the rubber on your shoes is cold and wet and the rubber on the pedals is cold, the grip is just insufficient. With these I have good grip even in that situation, due to the design and texture of the pedals. I also thought the uncovered plastic gas pedal was just lazy on GM's part.
Ideally I wish that GM made their aluminum pedals a little wider, then I would have bought them instead because they're so much easier to install.
At some point I will switch these out for something less MacGuyvered, hopefully DDMWorks will make something. If any of these come loose at all I'll just take them off and buy the GM ones, I don't want to mess with a less-than-secure pedal setup.
