Pretty sure you can pull the fuse, but the steering system is not designed for use without the motor, there would be extra stress that I'm not sure all the components can handle. That's just my opinion though. The driver selectable steering mode idea is one that many manufactures are doing but the Sonic is a cheaper car, maybe they could add that to future models.
The stresses are exactly the same all the way from the tie rod ends up to the motor under the dash. It's would only be more effort perceived by the driver from the electric motor to the steering wheel, which is the same shaft the motor connects to.
In other words, the forces are the same, it's just the electric motor is helping turn it for you so YOU don't have to work as hard.
